Fried Eel

1. Catch eel
2. Gut and de-slime by placing dead eel in warm water for 30 seconds and use newspaper to rub off the remaining slime
3. Cut into fillets
4. Season - garlic and honey work well
5. Fry till tender... easier said than done!

Be warned - undercooked eel is tough and overcooked is rubbery so there is an art to getting it right....smoking is the most fool-proof method.

A tried and true Maori recipe is to wrap eel in flax leaves and roast over glowing embers.
