Rum Raisins with Arborio Rice:

CERES Rum Raisins with Arborio Rice:

1/4 - 1/2 Cup Ceres Sugar
1/4 - 1/2 Cup Ceres Raisins
1/2 CUP White rum - any rum or brandy will do
1 - 1 1/2  Litre Milk
2 Tablespoons Ceres Olive Oil
3/4 Cup Ceres Arborio Rice
1 Vanilla Pod, Scrape into Milk; Throw in the pod too - but remove at end

METHOD:

The night before -

Soak raisins in alcohol and add 1/4 cup sugar which helps caramelize and flavour the rice

Next day

In a pot, put warm milk, with vanilla seeds and the pod.
Put oil into another pot and heat gently.
Add rice and stir - get a little bit of the nuttiness from lightly colouring the rice

Add sugar and liquid from the raisins, they will caramalise slightly
Add Milk ladle by ladle, carefully so as not to burn milk and remove pod.

Keep stirring constantly - keep adding warm milk until rice is al dente.
Add raisins at the end and fold in; add a smidgeon of oil for a glossy result - normally it would be butter

Serve immediately with passion fruit or stewed fruit.
