Ep9 Josh and Aaron - Free Range Breast of Chicken with a Moa Noir Reduction, Duchess Potatoes and Asparagus

Serves: 10



Moa reduction 

  • 150 ml Moa Distinction Ale
  • 150 ml chicken stock
  • 100 g Pancetta ham diced
  • 1 Shallot diced
  • 10 ml Extra virgin olive oil
  • 10 g Salted butter
  • 3 sprigs Thyme
  • 1 Tbsp. brown sugar
  • Sea salt 
  • freshly ground pepper

Duchess potato

  • 4 Agria potatoes
  • 100ml Cream
  • 50g Butter
  • 25g Parmesan
  • 1 head Garlic 
  • Salt
  • Pepper 

Corn fed chicken 

  • 80ml Olive oil
  • 10 Chicken breasts 
  • 50g Butter
  • 30 Asparagus spears
  • 60ml Olive oil





  1. Pre-heat the oven to 180 C
  2. Use a large pan to sauté off the garlic cloves with 2 table spoons olive oil till soft, approximately 7 minutes over medium heat, set aside in bowl to cool.
  3. In same large pan on high heat put 2 table spoons olive oil in pan, bring to heat then brown chicken on all sides until golden. Next place into a large oven tray skin side up and set aside.
  4. In the same large sauté pan add 2 Tbsp. spoons of butter and same of Olive oil - sauté off the Pancetta and the shallots on high heat for 5 minutes then add the Moa Distinction, chicken stock, Brown Sugar and Thyme reduce for 10 minutes on high heat then add to the Chicken Tray (do not pour over the chicken, add around sides) roast for 18 minutes at 180, uncovered.
  5. Boil the potatoes till soft then thoroughly drain. Press Potatoes and roasted Garlic through the Ricer. Add butter, cream, grated parmesan, salt and pepper to taste, lightly mix all together. Onto an oven tray pipe Potato into desired shape and bake at 180C for 6-7 minutes or until golden brown prior to serving.
  6. Blanch asparagus and straight into ice bath. Let stand until completely cool then spread out on a baking sheet lightly coat olive oil and season. Place into oven for 4-5 minutes and serve.
