Ep2 Sam and Dan - Caramelised Onion and Mushroom Tortellini with Burnt Butter and Sage Sauce.

Serves: 10



  • 500g ‘00’ flour 
  • 5 Eggs 
  • Salt

Caramelized onion filling

  • 3 Onions, Diced 
  • 1 Red onion, Diced 
  • 4 Button mushrooms, Sliced 
  • 1 Tbsp. Thyme 
  • 2 Tbsp. Olive oil 
  • 2 Tbsp Sugar 
  • 2 Tbsp. Balsamic vinegar
  • 2 Tbsp. Red wine vinegar
  • Salt 
  • Pepper

Beurre noisette

  • 250g Butter
  • 1/4 Cup Sage leaves 
  • 1 Lemon, juiced 



  1. For the pasta dough, combine the flour and salt and eggs in a stand mixer, knead for 5 minutes. Wrap and place into the fridge for 30 minutes.
  2. Into a large pan add diced onions, mushrooms and herbs. Fry in olive oil until tender. Then add sugar and vinegars to taste. Cook down until sticky and thick. Allow to cool.
  3. Remove the pasta from the fridge and roll through the pasta machine until desired thickness. Cut into circles, then add a Tbsp. of the mixture to the center. Wet one side and fold into tortellini shape. Cook the pasta in salted boiling water  About 3 minutes
  4. For the beurre noisette, melt butter in a pan with sage leaves and cook until, it starts to brown and catch on the bottom. As this happens, add in the lemon juice, serve over the pasta.
