Vanilla Cupcakes

Makes 48 Mini Cupcakes

2 cups Homebrand flour      
2 cups Homebrand sugar
2 tsp baking Soda
2 large eggs
1 cup buttermilk
1 cup sunflower oil
1 tsp vanilla bean paste
2 tsp vanilla essence
1/4 cup boiling water

1. Preheat oven to 145C. Combine all ingredients except the boiling water in a bowl and mix on a low speed with hand beater until combined. Add the boiling water once combined, beat on low speed until the mix is fully combined.  Don't over mix.

2. Place cupcake liners in baking pans and fill to two thirds with cupcake batter. Cook for 20 min or until a skewer comes out clean.

1 cup Mainland butter
4 cups Homebrand icing sugar
4 tbsp Anchor Soylife soy milk, plus extra
1 tsp Vanilla Bean Paste
1 tsp Vanilla Essence

1. Place Mainland butter in a large mixing bowl and whip for two minutes on high with a hand beater until fluffy. Add the dry ingredients and mix on low speed to avoid the icing sugar billowing.

2. Add the Anchor Soylife soy milk slowly. More milk may need to be added to achieve the desired consistency. Divide into separate quantities and add flavor and colouring as desired.
