Smoked Eggplant Curry

Serves 2

Wine Match:  Huntaway Reserve Pinot Noir

1 large eggplant, peeled, sliced into 1.5cm steaks
4 button mushrooms
1 tbsp canola oil
1 onion, finely chopped
2 cloves garlic
1 red chilli, finely chopped
1/2 tsp ground turmeric
1 tsp curry powder
Salt and freshly ground black pepper
1 tbsp apricot jam
2 tomatoes, cored, chopped
1 tbsp tomato paste
400ml water
200ml coconut cream
Steamed Sunrice Basmati rice, to serve
Manuka wood chips / shavings

1. Place the Manuka chips in a smoker or deep tray over medium heat. Add the eggplant and whole mushrooms to the smoker and smoke for 20 - 30 minutes until browned and the vegetables have a rich smoked flavour.

2. Heat the canola oil in a frying pan over medium heat and add the onion, garlic, chilli, turmeric and curry powder and fry until fragrant.

3. Dice the mushrooms and eggplant into bite sized pieces, add to the pan and coat with spice mix. Add the jam, tomatoes, tomato paste, water, and leave to simmer for 30mins. Add the coconut cream and season to taste with salt and pepper.

4. To serve, place the steamed rice in a serving dish and top with the curry.
