Red Emperor Ceviche

Red Emperor Ceviche

Serves 2

1 cup Red Emperor or other white fish, skinned, boned, 1cm diced
2 tbsp Lupi Olive oil
2 limes, juiced
2 tbsp chives, chopped
2tbsp dill, chopped
2 tbsp parsley, chopped
1 garlic clove, crushed
2 spring onions, chopped
2 tsp fresh lemon pepper
salt and freshly ground black pepper
2 tbsp pomegranate seeds
1. In a mixing bowl, combine Lupi Olive oil, lime juice, herbs (reserve a little of each for serving), garlic, spring onions, lemon pepper and season to taste with salt and pepper.

2. Place fish in marinade and set in refrigerator for one hour.

3. To serve, place on plate and sprinkle with fresh herbs.
