MasterChef New Zealand - Minestrone
100g pancetta, diced
3 garlic cloves, crushed
2 onion, finely diced
2 carrots, peeled, diced
3 courgettes, diced
4 celery stalks, diced
2 potatoes, peeled, diced
2 Tbs tomato paste
2 cups Campbells Real Stock Chicken
1 cup white wine
2 sprig oregano
2 sprigs thyme
1 sprig bay leaves
1 can cannellini beans, drained and rinsed
1 can borlotti beans, drained and rinsed
1/2 cup orzo pasta
8 green beans, topped, sliced
1 Heat a large oiled saucepan over a medium heat, add pancetta,
garlic and onion and sauté a few minutes. Add carrots,
courgettes, celery and potatoes, cook for 4-8 minutes stirring
occasionally until vegetables are soft but not coloured.
2 Add tomato paste, Campbells Real Stock Chicken and white wine. Tie the oregano, thyme and bay leaves together with kitchen string, add to soup. Cover and simmer for 1hour, stirring occasionally.
3 Add cannellini and borlotti beans, pasta and green beans and cook a further 10 - 15 minutes.
4 Season with salt and pepper just before serving.
