Fijian Chicken, Tomato and Potato Curry

Serves 2

6 chicken thighs, skinned, bone in

3 tsp ground turmeric

5 garlic cloves, finely chopped

5cm piece of ginger, peeled and finely chopped

3 tbsp vegetable oil

2 onion, chopped

2 cinnamon stick

3 tsp cumin seeds, toasted in a dry pan until fragrant and slightly darkened

3 tsp chilli flakes, to taste

2 Agria potatoes, peeled and cut into 3 cm chunks

½ tin crushed Italian tomatoes

500ml Campbells Real Chicken Stock

Salt

Coriander, chopped

Coriander leaves, to garnish

 

Raita

200ml plain unsweetened yoghurt

1 cucumber, peeled, split lengthways, seeded, grated, squeezed dry

¼ cup chopped mint leaves

1 tsp yellow mustard seeds, lightly toasted

½ tsp vegetable oil

Salt to taste

 

Basmati Rice

Perfectly cooked Sun Rice Basmati Indian Aromatic rice, to serve

 

1. Toss the chicken in the turmeric until the chicken is well coated with turmeric. Reserve.

2. Pound the garlic and ginger together with a mortar and pestle until you have a coarse paste, or finely chop each.

3. Heat the oil in a large frying pan over moderate heat and add the garlic, ginger, onion, cinnamon stick, cumin seeds and chilli flakes. Brown gently until the onion is soft.

4. Add the chicken thighs and fry until they have coloured all over, then add the potatoes, tomatoes, water and salt, mix well and bring to the boil. Cover and simmer until the chicken is cooked and the potatoes are tender.

5. Uncover and simmer until the sauce is thick. Taste and adjust the seasoning. Remove from the heat and let stand, then stir in the coriander.

6. To make the raita, put everything into a bowl mix well, taste and season.

7. Garnish the curry with fresh coriander and serve the raita and Sun Rice Basmati Indian Aromatic rice on the side .
