Episode 1 - Sticky date pudding

250g Dates
1 1/2 Cup Hot water
1 tsp Vanilla bean extract
1tsp Bicarbonate of soda
125g Softened butter
1 Cup Brown sugar
2 Eggs
1 3/4 Cup Self raising flour

Pistachio cream
1 Cup Cream
1 tsp Icing sugar
1/4 Cup Toasted pistachios
1 Zest of 1 lemon 
Spiced peaches
4 Golden peaches
2 Tbsp Butter
6 Cardamon pods
3Tbsp Raw sugr
1/2 tsp Cinnamon
Pinch Nutmeg
Toffee sauce
1 Cup Brown sugar
300ml Sour cream
1/2 tsp Vanilla bean extract
60g butter

Pre heat oven to 180 degrees, grease 8 ramekins

Chop dates and cover with hot water. Add baking soda and set aside to cool.
When cool, puree in food processor

Cream the butter, sugar and vanilla untill pale white, add eggs one at a time.
Fold through the pureed dates and flour untill combined.
Spoon into greased ramekins, bake untill a skewer comes out clean.

For the toffee sauce, combine all ingredients in a pan over medium heat. Bring to the boil and simmer for 2 minutes stirring if necessary.

Peel and chop peaches into cubes.
Melt butter cardamon pods in a pan add peaches, and cook on high for 2 minutes.
Add sugar, cinnamon and nutmeg. Cook untill sugar has melted set aside

For the chantilly cream, whip the cream, sugar and vanilla untill stiff peaks have formed.

Place pudding on plate make hole in the pudding with skewers and pour toffee sauce over. Spoon over peaches, and a spoon of cream. Garnish with pistachios and lemon zest.
