Episode 1 - Crispy skinned salmon with feta by Nikki and Jordan
3 Egg yolks
180g Cream chese
4 tbsp Chopped dill
4 tbsp Chopped chives
3 Egg whites whisked
120g Goats feta
5 Lemons, juiced
1 Cinnamon stick
3/4 Cup White chocolate buttons
1/2 tsp Flakey salt
2 tbsp Olive oil
4 200g salmon fillets skin on
4 Tbsp Capers
1 Cup Canola oil
Beat the egg yolks and cream cheese together untill smooth add the herbs and mis well. Fold through the crumbled feta and egg whites , place into muffin tins and bake at 175degrees for 15-20 minutes.
For the white chocolate sauce, simmer the lemon juice and cinnamon stick for 4 minutes. Remove the cinamon stick and reduce by half, add in the chocolate and stirr in untill melted.
Seaon and oil the salmon on both sides , have a medium hot pan and place skin side down. Cook for 10 minutes on the skin side to get the crispy skin. The turn for a furthe 40 seconds and rest.
In a deep pot, heat the canola oil, add in capers and fry untill crispy. Drain on a paper towel.
Then place in the kumara strips and fry untill golden. Drain on a paper towel.
To serve smeal the lemon chocolate sauce on the plate , place the salmon skin side up down one end of the plate. Place cheesecake at the other end and garnish with the kumara crisps. Garnish the salmon with micro cress and place capers around the dish.
