Pork Ribs With Salsa

2 cups white vinegar

2 litres water

¼ cup honey

¼ cup salt

1 onion, cut into quarters

2 kg free-range pork ribs


2 star anise, ground

2 tsp ground cinnamon

1 tbsp smoked paprika

4 cm piece of fresh ginger, chopped

2 cloves garlic, chopped 5 tbsp oil

Salt and pepper to taste

Salsa verde

1 clove garlic

2 tsp capers

3 cornichons

1 tbsp Dijon mustard

4 tbsp oil

4 tbsp white wine vinegar

¼ cup fresh basil

½ cup parsley

½ cup coriander

Salt and pepper to taste

For the pork Place the vinegar, water, honey, salt and onion into a large pot over a high heat and bring to a boil. Boil for 5 minutes then add the ribs. Reduce the heat to a simmer and cover the pot with a lid. Simmer for 35–40 minutes. Remove the ribs from the pot and dry with paper towels. For the rub Place all of the ingredients for the rub into a small food processor and whizz together until well combined. Rub all over the ribs and leave for 5 minutes. Place the ribs in the curanto and cook for 2 hours or alternatively preheat the oven to 180 deg. Place the ribs on a tray and bake in the oven for 15 minutes. Turn once and cook for another 10 minutes. For the salsa verde Place all of the ingredients for the salsa verde in a small food processor and whizz till combined. Serve with the ribs.
