Fresh salmon tartare


250gms salmon fillet 
1 Tbl red onion (fine dice)
3 Tbl gherkin / cornichon (fine dice)
1 Tbl capers (fine dice)

2 Tbl fresh dill (minced)
1/2 Tbl fresh tarragon (minced)
1 Tbl fresh chives (minced)
3 Tbl olive oil
1/2 tsp lemon zest
Squeeze lemon juice

Pinch sugar
Salt and pepper to season


Take the fresh salmon fillet (or scrapings off the bones etc) and chop into a small dice. Place in a bowl. Now add the red onion, gherkin and capers. Fold in together.

Next add your minced fresh herbs (mix and match with other summer style herbs if these are unavailable or not to your liking). Now add the olive oil, lemon zest and juice and finally season with a pinch of sugar and salt and pepper.

Serve the Tartare with crackers, whole meal toast points, bagel chips or the like.
