Welsh Rarebit

Welsh Rarebit

Makes 6
Cooking time 30 minutes
Cost under $20

3 Tbsp flour
3 Tbsp butter unsalted soft
1 tsp Dijon mustard
2 tsp Worchester sauce
3/4 cup milk
1 cup full cream
2 cups tasty grated cheese
sea salt
cracked pepper
6 slices of sourdough

In a medium sized saucepan melt the butter.
Once melted add the flour and stir until combined.
Cook for 30 seconds, then slowly whisk in the milk and cream until all the liquid is combined.
Add the mustard, Worchester sauce and the grated cheese.
Season with sea salt and cracked pepper to taste.
Cook the mixture on the stove for a further five minutes stirring with a wooden spoon continuously.
After cooking, remove from the saucepan and decant into a container ready to use.
To finish spread a generous amount of the rarebit mixture over each piece of sourdough and grill until golden brown on top.
To serve

Cut in half and eat while hot. Drizzle with extra Worchester sauce to taste.
