Vanessa Baxter's Best Ever Gingerbread!

3 Cups Flour
1.5 tsp Baking powder
3/4 tsp Baking soda
1/4 tsp Salt
1 Tbs Ground ginger
1 Tb Ground cinnamon
1/4 tsp Ground cloves
90g Butter
3/4 Cup Brown sugar
1 Egg
1/2 Cup Molasses (I use black strap)
2 tsp Vanilla

Stir together the flour, baking powder, soda, salt, ginger, cinnamon and cloves.
In a stand mixer, beat the butter, sugar and egg on a medium speed until smoothly blended
Add the molasses and vanilla and mix together till smooth.
Add dry ingredients to wet ingredients and mix to blend well.
Divide in half and create two round disc shapes. Wrap in plastic wrap and pop in fridge for 2 hours (or overnight). Bring to room temperature (1/2 hour) before rolling out.
Roll out the dough between two pieces of parchment paper. Remove the top piece and use a cutter to create your men (or upside down reindeer men!)
Place on a baking tray lined with baking paper and bake at 175C (not fan forced) for around 10-12 minutes. Remove and cool completely on a wire rack.

Use royal icing to decorate:
1 Egg White, whisked until soft peaks
1 Cup Icing sugar - add to the egg
Food colouring as desired.
