Kiwifruit Walnut Bread

Time: 1 1/2 hours
Cost: $9

Ingredients
2 1/4 cup flour, sifted
1/2 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 cups (about 4) peeled, chopped and drained kiwifruit
3/4 cup chopped walnuts, toasted
1 egg, beaten
50g butter, melted
1 tsp vanilla essence
1 cup milk at room temperature

Method
Preheat oven to 180degC.
Sift dry ingredients into a large bowl.
Add kiwifruit and walnuts and mix well.
Add egg, butter and vanilla and milk and stir until just blended.
Pour into a greased and floured loaf tin
Bake about one hour, or until skewer comes out clean.
Cool in the tin for 5 - 10 minutes, then turn on to cooling rack.
Serve in thin slices; very good spread with softened cream cheese.


Lemon-Kiwi Tea Cakes

Serves: 6
Time: 1 hour
Cost: $6

Ingredients
100g butter
1/2 cups raw sugar
3 eggs
1/2 tsp vanilla essence
4 tbsp plain yoghurt
1 tsp lemon extract
3/4 cups self-raising flour
2 tbsp milk powder
1/4 cups dried kiwifruit slices, roughly chopped
1 kiwifruit, peeled and thinly sliced

Method
Preheat oven to 180degC.
Grease large 6-hole muffin tin.
Beat butter, sugar and vanilla until light and fluffy.
Beat in eggs, one at a time, beating well after each addition.
Mix in yoghurt.
Sift in flour and milk powder and stir in kiwifruit, slices and dried.
Pour batter into prepared tin and bake until ready, about 40 minutes.


Kiwifruit Muffins

Makes: 12
Time: 35 minutes
Cost: $5

Ingredients
3/4 cups flour
1/2 cup wholemeal flour
1/2 cup cornmeal
3 tsp baking powder
1/2 cup sugar
1/2 cups vegetable oil
2 eggs
1/2 cup milk
1/2 cup kiwifruit, peeled and chopped

Method
Preheat oven to 200degC.
Line muffin tins with paper liners or grease.
Mix dry ingredients together in a medium sized bowl until combined. Set aside.
Beat together oil, eggs and milk in a large bowl.
Stir in kiwifruit by hand.
Add dry ingredients to kiwifruit mixture, stirring by hand until just combined.
Spoon or drop into muffin tins, filling 3/4 full.
Bake about 15 to 20 minutes, until done.
