Apple crumble pie

Chocolate pecan pie

Sweet Pastry

Makes: approx. 5 bases
Time to make: 10 - 15 minutes
Cost: $5.00

250g (1 1/3 cups) sugar
500g  butter at room temperature
1 egg
750g (5 1/3 cups) flour

Mix butter and sugar together until just combined and there are no lumps of butter left.
Add egg and mix until it is blended through.
Add the flour and mix to a smooth dough.  If using a mixer, use the dough hook so you don't beat air into it.
Wrap the dough in cling film and chill for at least 30 minutes.  It will keep for two to three weeks in the fridge.
The size of the dish you use will determine the amount of dough you will need.

Apple Crumble Pie

Serves: 10 - 12
Time to make: 30 minutes
Cost: $7.00

Approximately 1/5 recipe Sweet Pastry
4 medium apples
1/2 cup flaked almonds, (toasted, see below)
1 tbsp cinnamon
1 cup sultanas
1/3 cup sugar
2 tbsp arrowroot
1/4 cup cold water
1/2 cup boiling water

Preheat oven to 180degC and toast the almonds.
Roll the pastry to as close to 5mm as you can get it and place into a greased dish covering base and sides.  Sprinkle a thin layer of breadcrumbs over the pastry; this will soak up the moisture from the apple mix and allow the pastry to bake firm.
Peel, core and cube apples into a bowl. Add the cinnamon, sultanas and sugar and mix together.
Have your boiling water in a pot on the stove.  Mix the arrowroot with the cold water then, stirring continuously, add to the boiling water. Once it thickens and starts to boil remove from the heat and add to the apple. Mix until everything is combined then pour on to the pastry and spread evenly.


125g butter at room temperature
125g 1 cup flour
75g (1/2 cup) brown sugar
100g (1 1/4 cup) rolled oats

Cream butter until smooth, about one minute.
Mix the remaining ingredients together until there are no lumps left in the brown sugar.  Add to the butter and carefully rub through your fingers until the mixture is combined but still crumbly.
Put the crumble on top of the apples and press down softly so it won't fall off when baked.
Bake for 45 minutes to one hour.  Serve with lashings of vanilla ice cream or whipped cream.

Chocolate Pecan Pie

Serves:  10 - 12
Time to make:  1 hour
Cost:  $15

Approximately 1/5 recipe Sweet Pastry
Enough rice to fill base (NB: this can reused in the normal way)
2/3 cup brown sugar
2 eggs
1 tsp vanilla
1 cup golden syrup
1/3 c cream
200g pecans
75g chocolate, roughly chopped

Preheat oven to 180degC.
Roll the pastry to as close to 5mm as you can get it and place into a greased 26cm flan dish covering base and sides.  Line base with baking paper so that it overlaps edges, fill with rice and blind bake 15 - 20 minutes. Allow to cool for 10 minutes before removing rice and baking paper.
Put brown sugar, eggs, vanilla, golden syrup and cream into a bowl and whisk until smooth.
Add pecans and chocolate, mix through then pour into your flan dish.
Bake for 30 to 40 minutes.  Serve warm or cold.
