Tamara Jane's Recipe - Vanilla Cupcakes and Frosting - 15 May


Vanilla Cupcakes

200g plain flour
1 1/2 tsp baking powder
115g butter
165g castor sugar
1 1/2 tsp vanilla extract
2 eggs
125ml milk

Preheat oven to 180degC. Line a 12-cup muffin tin with paper liners.
Sift together the flour and baking powder and set aside.

In a large bowl beat the butter for 1-2 minutes until creamy. Beat in the sugar and continue to beat until light and fluffy. Add the eggs one at a time, scraping down the bowl after each addition.
Beat in the vanilla.
Add half the flour mixture and half the milk to the butter, then the remaining flour and milk. Beat briefly until smooth on low speed.

Divide the mix between the 12 wells.
Bake approximately 18 minutes until lightly browned and the cupcake springs back when gently pushed.
Allow to cool, and ice with vanilla frosting or other flavour choice.


Vanilla Frosting

115g unsalted butter
4 cups icing sugar (approx 500g)
1/4 cup milk
1 tsp vanilla extract

Beat butter until soft - about 2 minutes. Add half the icing sugar and all the milk. Beat on high speed until light and fluffy. Add the remaining icing sugar and vanilla. If the frosting is stiff add a little more milk.

Spread or pipe on to cooled cupcakes and decorate as desired.
