Tamara Jane's Recipe - Oat, Muesli Cookies - 26 June


Oat, cranberry and white-chocolate-chip cookies

Makes about 30 cookies

120g butter softened
100g brown sugar
2 eggs
100g oats
160g plain flour
1 tsp baking soda
180g craisins
2/3 cup white chocolate chips or chunks

  1. Pre heat oven to 200degC. Cream butter and sugar until light and fluffy. Beat in eggs one at a time.
  2. Combine oats, flour, baking soda.
  3. Add to the butter mixture and mix well.
  4. Stir the craisins and white chocolate into the creamed mixture.
  5. Drop spoonfuls on to a greased baking tray.
  6. Bake 10-12 minutes until golden brown.
  7. Allow to cool on a wire rack.


Muesli and maple cookies

Makes about 30 cookies

2 tbsp boiling water
1 tsp bicarbonate of soda 
125g butter, melted, cooled 
2 tbsp maple syrup 
220g (2 cups) natural muesli
150g (3/4 cup, firmly packed) brown sugar 
150g (1 cup) plain flour

  1. Preheat oven to 180degC. Line 2 large baking trays with non-stick baking paper.
  2. Combine the water and bicarbonate of soda in a medium jug. Add the melted butter and maple syrup and stir to combine.
  3. Place the muesli, brown sugar and flour in a large mixing bowl. Pour in butter mixture and use a wooden spoon to mix until well combined.
  4. Place teaspoonsful of the mixture onto the lined trays about 5cm apart.
  5. Bake in preheated oven for 10-12 minutes or until golden. Stand on baking trays for 5 minutes before transferring to a wire rack to cool. Repeat with the remaining mixture.
