Banana spring rolls with caramel sauce

Bananas are plentiful and good value all year around. Kids love them and they are so versatile in cooking and baking. Here are three yummy recipes.

Banana, butterscotch and pecan pudding

Preparation time: 15 minutes
Cooking time: 45 minutes
Serves 4

2 bananas, peeled
125g pecans, roughly chopped
1/4 cup golden syrup
100g butter
2/3 cup brown sugar
2 eggs
1 cup (150g) self-raising flour
100ml milk
1 cup (250ml) boiling water

1. Preheat oven to 180degC. Lightly grease an 8 cup ovenproof baking dish. Slice bananas into dish. Scatter over pecans. Drizzle over golden syrup and dot with 40g of the butter.

2. Beat remaining butter with electric beaters until smooth. Add half the sugar, beat until creamy. Add eggs, one at a time. Stir in flour, alternately with milk.

3. Spread mixture over banana and pecans. Sprinkle remaining sugar over top. Pour over boiling water. Place dish on a tray and bake for 45-50 minutes until cooked. Serve immediately.

Banana and Mars Bar Cake

Preparation time: 15 minutes
Cooking time: 55 minutes plus cooling time
Serves 12

150g butter
1/2 cup (100g) brown sugar
2 eggs
2 bananas, mashed
2 cups (300g) self-raising flour
3 x 60g Mars Bars, chopped
1/2 cup (125ml) milk
1 cup (150g) icing sugar
2 tbsp caramel topping
2 tsp hot water

1. Preheat oven to 180degC. Line a 7 x 11 x 21cm loaf pan with non-stick baking paper. Beat butter and brown sugar until pale and creamy. Beat in eggs and mashed bananas.

2. Combine flour and Mars Bars. Fold into the butter mixture with milk. Spoon into pan. Bake for 50-55 minutes. Set aside to cool.

3. Combine icing sugar, caramel topping and 2 tsp hot water. Drizzle over the cake to serve.

Serves: 8

2 large firm bananas
8 spring roll wrappers, thawed
1 cup brown sugar, or to taste
1 litre oil for deep frying

1. Preheat the oil in a deep-fryer or large cast-iron frypan to 190 degrees C or medium-high heat.

2. Peel bananas and slice them in half lengthwise, then crosswise into quarters. Place one piece of banana diagonally across the corner of a spring roll wrapper, and sprinkle with brown sugar to taste. Roll from the corner to the center, then fold top and bottom corners in, and continue rolling. Dip your finger in water and brush the last edge to seal. Repeat with remaining banana pieces.

3. Fry a few banana rolls at a time in the hot oil until evenly browned. Remove to paper towels to drain. Serve hot or cold.
