Spicy Pork Balls
Ingredients for the Pork Balls:
1/2 cup finely sliced coriander, including stalks
3 red chillies, finely diced
2 stalks lemongrass (white part only), finely minced
4 kaffir lime leaves, finely sliced
1-2 tablespoons fish sauce to taste
1 tablespoon brown sugar
1/2 teaspoon sesame oil
freshly ground black pepper to taste
peanut, canola or grapeseed oil for frying
Ingredients for the Dipping Sauce:
1 red chilli, seeded and finely diced
1 tablespoon fish sauce
2 tablespoons sliced cucumber, halved and quartered lengthwise, seeds removed and finely sliced into triangles
1 tablespoon brown sugar or grated palm sugar
50ml rice wine vinegar
Mince the pork with a stick blender or in a food processor until you have a medium mince (or buy minced pork). You do not want it too fine as the balls can tend to dry out when cooked.
Place the minced pork in a bowl with the remaining ingredients and combine well. With wet hands, roll the mixture into balls about the size of golf balls. Fry in oil until nicely golden. Remove and drain on paper towels.
Combine all the ingredients for the dressing in a mixing bowl and transfer to a small serving bowl.
Arrange pork balls on a plate with cocktail sticks and the dipping sauce.
