Plum and yoghurt cake

125g butter
200g white sugar
2 eggs
1.5tsp baking powder
150g white flour
50g ground almonds
Pinch of salt
220g natural yoghurt
About 5-7 black doris or omega plums, or half a tin of black doris plums


Preheat oven to 180C.

Cut plums in half and remove stones. If using fresh plums, scour the skin slightly and place them in a bowl and sprinkle with a little sugar. Set aside.

Prepare your cake tin by lining with baking paper and greasing with butter.

Cream butter and sugar together very well. Add eggs one at a time, beating well after each addition.  Sift over flour and baking powder and salt.  Add yoghurt and almonds. Fold together until well combined.  Place mixture into your tin.

Press plums cut side up evenly into the top of the cake. Sprinkle with a little raw sugar.

Bake for 50 minutes to one hour, depending on your oven. Leave to cool in tin for another half hour or so.  Serve sprinkled with icing sugar if you wish, and with yoghurt or cream on the side.
