Paua Wontons

To make approx 150 Paua Wontons


1 kg Minced Paua
300gms minced prawn or white fish
6 cloves crushed garlic
5cm piece crushed ginger
6 finely chopped spring onions
small bunch chopped fresh coriander
shot of shoaxing rice wine
shot of light soy sauce
1/2 tsp sesame oil
1 egg


Mix and stand for 30 mins

Take 1 tsp of this mixture and 1 wonton pastry and fold into a wonton.

Deep fry until golden, approx 3 mins

Serve with a sweet chilli sauce, or QP mayoniase, or a sweet and sour sauce.

This is a great dish to prepare in a group as a social activity. The mixture can be prepared before hand and then the folding can be done with friends over a bottle or 2 of wine. Frying the frying is very fast, approx 3 minutes per batch.

You can substitute paua for just fish or pork and prawns. Or try experimenting.
