by How to Feed a Family of 6 for Under $20

Meatloaf: Serves 10 for $17.60 (or you can use less mince and sausage to serve 6)

1kg Mince

Sausage Meat

2 Carrots (grated)

Tin of Corn or Mixed Veges

2 Slices Bread (crumbed)

1 Apple (grated)

Garlic, chopped

Onion, diced

2 Tbs Tomato Sauce

1 Tbs Curry Powder

Salt & Pepper, to taste

Mix all the ingredients together and place in a oven dish in a log shape, making sure it's not too thick or wide as it won't cook in the middle otherwise.

BBQ Sauce

½ Cup Tomato Sauce

1 Tbs Mustard

½ Cup Malt Vinegar

½ Cup Golden Syrup

¼ Cup Soy or Worchester Sauce

¼ Cup Warm Water

Salt & Pepper, to taste

Mix together and pour half over the Meatloaf, place in oven (pre-heated 180c).

Keep spooning the sauce in the bottom of the tray over the meatloaf and add the remaining sauce 20 minutes into cooking.

Cook till the juices run clear in the middle of the meatloaf.

8 Potatoes

2Tbs Butter

Milk (optional)

Carrots or kumara (optional)

Boil the potatoes, till soft.

Drain then add butter and milk with salt and pepper.

Serve the meatloaf with the mash and mixed veges. Delicious cold on sandwiches the next day too :)
