Nicola's spicy sausage & lentil soup

150-200g chorizo sausage
1 Tbsp olive or canola oil
2 medium onions, diced
1/2 cup (2-3 sticks) thinly sliced celery
1 large carrot, quartered and sliced
1 tsp each smoked paprika and cumin
1/2 tsp each dried thyme and oregano
2 x 400g cans diced tomatoes in juice
4 cups boiling water plus 2 tsp instant chicken stock or 4 cups chicken stock
2 cups brown lentils*
1-2 cups additional water, if required
salt and pepper to taste


Thinly slice the sausage, brown it in the oil in a large pot, then add the diced onion, celery and carrot. Cook stirring occasionally until the vegetables have softened and are beginning to brown, then stir in the paprika, cumin and herbs, Cook for a minute longer, then add the tomatoes, water and instant stock (or the chicken stock) then sprinkle in the lentils.

Bring the soup to the boil, then reduce the heat to a gentle simmer, cover tightly and cook for 35-45 minutes or until the lentils are very tender. Check the soup and stir it occasionally, especially towards the end of the time, adding the some or all of the extra water if you think it is required.
