Nachos for Kids

Nachos for Kids!

Prep Time: 20 minutes
Cost: $15
Serves: 6

250g mince (beef, chicken, or pork)
1 bag nacho chips
1 carrot, grated
1 can chopped tomatoes
1 onion, diced
2 tablespoons olive oil
1 can of chilli beans
2 teaspoons ground coriander
2 teaspoons cumin
1/2  teaspoon chilli flakes
Left over veges

1 red capsicum
1 tub sour cream

Heat oil in frying pan, cook onion, add mince, cook through. Add all the other ingredients apart from sour cream and cheese, simmer for 15 minutes. Serve with nacho chips topped with sour cream and grated cheese.  If you have left over green veges from the night before I like to add these to the mince mixture.
