Lolly Cake

Makes: approx. 20 pieces

Ingredients: 

250g butter

180g eskimo lollies, cut into pieces

1 x tin condensed milk

2 packets malt biscuits, finely crushed

Coconut to sprinkle

 

Method: 

Grease and line a slice tin approximately 27cm x 17cm

Melt butter and stir in condensed milk. Cool slightly. Add cut eskimos and crushed biscuits, and mix until well combined.

Firmly press into tin. Sprinkle with coconut and refrigerate overnight to set.

Cut into desired size and bag or place into a glass jar.
