Corn fritters with poached egg.

Lunch Box Pasta Salad

Good for kids using all their energy, or as an after sport snack. Easy to do and can be served cold. The pasta can be replaced by gourmet potato.

200g pasta, (Penne is preferable) cooked and drained
2 rashes bacon or ham or luncheon , cut into pieces and slightly sauteed off
1 tbsp of chopped parsley
4 button mushrooms quartered and sauteed off in oil
4 cherry tomato quartered
2 tbsp mayonnaise
1 tbsp white vinegar
Salt/pepper to taste

In a large bowl mix all ingredients together, season to taste and put into a Tupperware container, to fit in lunch box.

Kids will love it and it is a proper lunch at no cost.

Corn fritters with Avocado and Ham

After school snack or ideal brunch dish.

1 can sweet corn
1 can corn kernel
2 eggs
1 tbsp full of flour
Salt pepper to taste
1 tbsp chopped parsley
1 soft avocado
1 slices of shaved ham per person
2 tbsp olive oil

In a bowl mix both cans of corn together with the parsley, add the eggs and stir thoroughly.

Next add the flour and salt and pepper to taste.

In a pan, heat the olive oil, then spoon the mix into little round discs, cook on one side then flip over and finish cooking.

Take the avocado and spoon out flesh, mash it with a fork season to taste and spread it on top of each fritters then add a slice of ham and serve as it is. A good change to sweet snacks.

For brunch you can top up the ham with a poached egg or scrambled eggs.
