Good old fashioned Banana Bread

1/3 cup solid butter
2/3 cup sugar
2 eggs
1 cup mashed ripe bananas (about 4)
1/4  teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cups flour
1/2 cup chopped nuts of your choice
Pinch of cinnamon
1 teaspoon vanilla

Preheat the oven to 180 degrees.
Oil and flour a loaf pan.

- Using an electric mixer, cream the butter and sugar.
- With the mixer running on medium speed, add the eggs one at a time.
- Add the bananas and vanilla and mix well.
- Add the baking powder, soda, salt, flour, nuts and cinnamon and mix thoroughly.
- The dough will be sticky.
- Pour the dough into the prepared pan and bake about one hour or until the centre is brown and set.

Banana candles
3 bananas
2 tbsp lemon juice
6 pineapple rings
2 Tbsp mayonnaise (the condensed milk variety from Eta if possible)
3 glace cherries
1 iceburg lettuce

- Half the bananas cross wise and dip in the lemon juice.
- Place some lettuce leave on a small dish and top with a pineapple ring
- Place each half banana in a pineapple ring and drizzle the top with mayonnaise
- Using a toothpick, fix half a cherry to the top of the banana so it resembles a candle!
(Orange slices can be used instead of pineapple rings)

Bananas wrapped in ham
3 bananas
1 tbsp lemon juice
6 slices of deli ham (large)
1 tbsp Dijon mustard

- Peel the bananas and cut in half lengthwise
- Dip each in lemon juice
- Spread each slice of ham with the mustard and wrap around the bananas, secure with toothpicks
- Arrange the bananas in a greased baking dish, cover with the cheese sauce and bake at 180C for 15 minutes or until golden and bubbly at the edges.
- Serve for lunch with a salad.

Cheese sauce
2 tbsp butter
2 tbsp flour
1/2 tsp salt
Pinch of cayenne pepper
1 cup milk
1/2  cup grated tasty cheese

- Melt the butter in a small saucepan and then stir in the dry ingreadients
- Add the milk and stir briskly with a whisk until it thickens and comes to the boil
- Once the sauce is smooth and thickened, stir in the grated cheese.
- Pour over the bananas.

Banana Flambe

6 bananas
6 tbsp caster sugar
100g butter, melted
1/2 cup brandy

- Peel 6 bananas and pack them into a greased casserole dish
- Sprinkle with lemon juice and castor sugar and then pour over some melted butter
- Bake at 180degC until golden brown
- Pour over 1/2 glass of brandy and set alight and bring flaming to the table!

Banana Sausages

6 bananas
1/4 cup lemon juice
6 frankfurters
12 rashers of streaky bacon
6 pineapple rings

- Peel the bananas and dip them in lemon juice
- Cut each banana lengthwise and place a sausage between them
- Wrap 2 rashers of bacon around them and secure with a toothpick
- Press each banana through a pineapple ring
- Place the bananas in a greased baking dish and Grill for 5 minutes them flip them and grill until golden brown
