Jax Hamilton's Banana Ice Cream Sundae

2 tbsp flaked almonds
4 ripe bananas, in chunks
1 tbsp cream
1 tsp vanilla essence
Pop your almonds in a frying pan, dry roast over a medium heat tossing the pan now and then so you get an even colour.
Remove from the heat and allow to cool.
Take your bananas, peel them, cut them into 1 inch chunks, pop in a glad bag or container and place in the freezer.
Allow to freeze for about 2 - 3 hours.
Remove from freezer, place in a food processor with cream and vanilla essence and blend to a smooth cream.
Scoop into 4 dishes, sprinkle over the almonds and you are in ice cream heaven.
