Hot Sour Soup

Hot Sour Soup
Serves 4-6
Preparation time: 10 minutes
Cooking time 10minutes

300 grams free-range pork tenderloin
1 teaspoon soy sauce
1/2 teaspoon sesame oil
1 teaspoon cornflour
1/2 cup tinned bamboo shoots
10 grams black fungus
10 grams white fungus 
4 cups stock
2 cups water
1 teaspoon granulated sugar
2 tablespoons soy sauce
2 tablespoons white rice vinegar
1 1/2 - 2 teaspoons white pepper (this is the "hot")
A little salt to taste if required

Slice the pork into strips (with the grain) and marinade in combined soy, sesame and cornflour.
Soak the fungus in warm water until soft. 
Remove and cut around the tough stem and cut in to manageable strips.
Simmer all ingredients together for 10 minutes in the stock and water. 
Add the sugar, soy, vinegar and white pepper to taste.
