Hot Smoked Salmon and Pink Grapefruit Salad w red pepper dressing

2 pink grapefruits

100g rocket

250g hot-smoked salmon

1 roasted red pepper, drained (from a jar or deli counter)

2 tsp white wine vinegar

1 tsp horseradish cream

pinch dried chilli

salt and freshly ground black pepper


Carefully peel your grapefruits, getting as close to the flesh as you can (the pith is really bitter).


Using a sharp knife segment your fruit over a bowl catching all the lovely juices.


Place a handful of the rocket on each plate and arrange the grapefruit segments on top.  


Flake the salmon and place on top of the rocket and grapefruit.


Pop the red pepper, any remaining grapefruit juice, vinegar, horseradish cream and chilli with a drizzle of olive oil in a food processor and blend until smooth.


Taste and season your dressing before drizzling over your salad.


SERVE with a hunk of warm crusty bread
