Option one Celery and Smoked Chicken Snackettes
100g smoked chicken - very finely chopped
1 small red onion - very finely chopped
250g cream cheese
1 tsp lemon zest
1/2 cup finely chopped parsley
Salt to season
Lots of freshly ground black pepper
1 bunch of celery cut into longish fingers
Combine ingredients except celery. Fill the celery pieces with above mixture&.
Option two Cheats Nachos

Large packet corn chips
Med to large can baked beans - size will depend on how many mouths want food!
Jar chunky tomato salsa
Grated cheddar cheese to top - I use Edam to reduce fat&
Sour cream to serve - use the lite version to reduce the fat!
Preset oven to 200C. Line a shallow baking dish with baking paper.
Spread corn chips evenly over baking paper. Top with the baked bean, followed by salsa and grated cheese.
Bake for around 15 minutes.
Remove from oven when golden then top with chopped coriander.
