Guillaume Nicoli's French Apple Tart

Time 20 min plus baking time

6 apples (not granny smith but any other variety is fine)
10 gr cinnamon powder
50 gr caster sugar

1 x roll of sweet pastry or short pastry

Frangipani:
50 gr almond powder blanched
1 egg
50 gr unsalted butter
50 gr caster sugar


Pre-heat the oven to 175 degrees.

Add pastry to a greased tart mould. Pierce holes in the base with a fork.
 
Half melt the butter in a bowl then add the caster sugar and whisk until it is creamy in texture. Add the almond meal, than finally the egg.

Pour the mixture into the pastry base.

Peel the apples, cut them in half, remove the centre, and slice into half centimetre sicks.

Apply the sliced apple into the sweet pastry base, using enough apple to cover it.

In a bowl, mix the cinnamon powder with the 50gr caster sugar, and apply on the top of the apples.

Put the tart in the oven and bake for 30 minutes (some ovens will require an extra 5-10mins baking time.)

Allow to cool slightly then serve with French vanilla ice cream or fresh cream.
