Gran's Kitchen recipes - Rhubarb crumble, raisin scrolls - 26 May


Rhubarb Crumble

5 cups rhubarb, chopped

Crumble
1 cup rolled oats
Pinch salt
3/4 cup flour
1 cup brown sugar
1/2 cup melted butter

Sauce
1 cup sugar
1 cup water
2 tablespoons cornflour
1/2 teaspoon vanilla

Mix crumble ingredients and divide in half. Line dish with half the mixture and place cut rhubarb on top.
Mix sauce ingredients in a pan and heat over slow heat until sugar is dissolved.
Pour sauce over rhubarb, then cover the whole with the other half of the crumble mixture.
Bake at 190degC for 30-40 minutes.


Granny Barr's Raisin Scrolls

4 cups flour
2 teaspoons baking powder
1 teaspoon salt
175g butter
1 1/2 cups milk (approx)
Melted butter for spreading
1 cup raisins
1 cup brown sugar
1 teaspoon cinnamon

Sift flour, baking powder and salt. Rub in butter, add milk to make a dough.
Roll out the dough and spread lightly with melted butter and sprinkle with cinnamon, sugar and raisins. Roll up and cut into
4cm pieces. Place scrolls on tray.
Bake 20 minutes at 200degC.
