Cranberry Spiked Turkey

Serves: 8-10 people
Preparation time: 2-3 hours

3 kg whole turkey

For marinating 
1 L vegetable stock 
1/4 cup salt 
1/2 cup brown sugar 
1 tbsp black pepper 
1 tsp all spice 
1 tsp chopped ginger 
1 cup cranberry 
1/2 cup orange marmalade 
2/3 cup apple cider 
2-3 sage leaves 
2 tbsp butter

For stuffing 
1 red apple 
1/2 onions 
1 carrot 
1 cinamon stick 
2-3 star anise 
4 spring rosemary 
3-4 sage leaves

Blend the cranberry and combine all the other ingredients together 
Save some of the  marinade for glaze.
Marinade the turkey for at least 24 hours 
Remove from the marinate and pat dry and stuff with stuffing 
Re heat oven at 200C, cover the turkey with foil and roast it.
After one hour remove the foil and reduce the temp to 170 C and roast it for another 1 and half hours, till skin is crispy and turkey is cooked.
Take the remaining marinade and add butter and reduce it to form thick glaze.
Glaze the turkey with the glaze once the foil is removed  while the turkey is being cooked
