Carrot Cake

Ingredients:
225ml Canola Oil (or cooking oil)
225 g brown sugar
3 eggs
2 and 1/4 cups grated carrot
75g dried cranberries (approx)
75g sultanas (approx)
1/3 Cup crushed walnuts
1 and 1/2 Cups standard flour
1 and 1/2 teaspoons EACH of baking powder and baking soda
1 teaspoon EACH of ginger and cinnamon
1/2 teaspoon mixed spice
Method:
Prep a 23 cm cake tin and warm oven to 160C.
Cream the oil and sugar. Add the eggs one at a time and beat in well. Add the carrots, cranberries, sultanas and nuts. Stir in the dry ingredients.
Bake for 50 - 60 mins.
Top with cream cheese icing.
