Caramelised Apricots with Vanilla Flan

(Abricot caramelises cuit au flan a la vanilla)

Serves: 4

Time: 20 min plus baking

Cost: $10

Vanilla Flan:

1 egg

40g caster sugar

15g corn flour

60ml milk

40ml fresh cream

4g vanilla paste or essence


Whisk caster sugar and corn flourr in a bowl. Then add the egg.

Finally add milk, cream and vanilla paste.

Caramelised Apricots:

6 fresh apricots

100g caster sugar


Pre-heat the oven 180 degrees.

In a pan, fry the sugar and a bit of water, until it caramelises.

During this time cut each apricot in 8 pieces. When caramel is ready, add the sliced apricots and cook them gently in the caramel.

In ramequins display the caramelised apricot, then add the vanilla flan and bake for 15-20 min. Serve warm, and with French Vanilla Ice Cream.
