Candied Pecan, Kumara and banana muffins

Ingredients 

1-3/4 cup all-purpose flour

1/2 cup firmly packed brown sugar

2 tsp baking powder

1 tsp ground allspice

1/2 tsp salt

1-1/2 cups mashed orange kumara

2/3 cup mashed ripe banana

1/4 cup melted butter

2 eggs, slightly beaten

3/4 cup milk

1/2 cup chopped toasted pecans, PLUS A FEW EXTRA FOR GARNISH (OPTIONAL)

 1/2 cup sugar

 

Method

Preheat oven to 200 c. Grease 2 dozen muffin tray.

 

In medium bowl, combine flour, sugar, baking powder, allspice and salt.

 

In large bowl, combine kumara, bananas, butter, eggs and milk; mix well. Add flour mixture and pecans; mix well.

 

Fill prepared muffins pans two-thirds full. Bake until tops spring back when lightly touched, about 20 minutes. Serve warm.

 

Optional… place remaining sugar into a large saucepen to caramelise. when rich and golden dip remaining pecans into sugar and set aside to cool. top each muffin with a pecan.
