Calamari Ripieni Alla Viestana

Makes 4 Squid tubes



For filling:

4 Calamari tubes

Finely chopped garlic and parsley

50 gr parmesan cheese

1 egg

200gr of breadcrumbs

2 teaspoons milk

100gr breadcrumbs


To cook :

Cooking Oil

Finely chopped carrots and onions

Tomato sauce

Finely chopped garlic and parsley

White wine

Extra virgin olive oil


Procedure :

Mix all ingredients for filling and place into calamari tubes.

Lightly fry carrots and onions in oil, add calamari and cook for 3 minutes.

Add white wine and cook until evaporated, add garlic, parsley and tomato sauce and leave until it reduces to a thick sauce.

Drizzle with extra virgin olive oil and serve.
