Steamed salmon with black bean and ginger paste

Serves 4

Ingredients:
4 x 150g salmon fillets
2 tbsp black beans
70mls veg oil
1 1/2 tbsp ginger, peeled and grated
3 cloves of garlic, finely sliced
2 large red chillies, sliced very thinly, divided measure
2 tbsp sweet soy sauce
2 tbsp palm sugar
1/2 tsp ground black pepper
Coriander leaves for garnish

Method:

To make the black bean paste:

Heat the veg oil in a small saucepan. When hot add the ginger, garlic and half the chilli. Cook until fragrant and just changing colour. Do not brown. Add the black beans, soy, sugar and pepper and reduce heat. Gently combine until the sugar has dissolved. If it is a little too thick simply add a touch of water. The mix should be liquid but thick.

Place the salmon onto a plate that fits into your bamboo steamer, take the black bean and ginger mix and divide it between each piece of salmon and steam covered for 6-7 minutes or until cooked to your liking.
