Brett McGregor's Nasi Goreng

Nasi Goreng – Brett McGregor  

Serves 4

Ingredients 

2 tbsp cooking oil

3 shallots, finely diced

2 cloves of garlic, diced

3 cups cooked white rice, cooled

2 tbsp Nasi goreng Paste

2 tbsp kecap manis

1 cup cooked prawns

1 cup cabbage, finely sliced

150g smoked fish, gently broken into small pieces

4 eggs, fried

 

Bretts Nasi goreng paste 

2 tbsp veg oil

4 cloves of garlic

2 shallots

25g roasted peanuts

4 red chillies

1 tbsp tamarind pulp

1 tsp shrimp paste (optional)

1 tsp sugar

1 chilli, diced

 

Garnish

Spring onion and peanuts

 

Method 

To make the paste... Slowly combine all ingredients into your blender and pulse together. Place all ingredients into a mortar and pestle and bash until you have a fine paste.

1. Add 1 tbsp of the oil to a frypan and heat to med.

2. When hot add the shallots, garlic and stirfry until fragrant and softened.

3. Add the rice, being careful to break up any lumps, then the kecap manis and combine, then add the paste and stir fry for a minute.

4. Add cabbage and gently combine. Cook until the cabbage has softened.

5. Taste to check seasoning, and add the prawns, and smoked fish and combine. Set aside. Meanwhile fry the eggs in remaining oil until just cooked     through.

6. Serve in a bowl topped with a fried egg.

 

Optional garnish 

Sliced spring onion, fried shallots and peanuts.
