400g mixed mushrooms, cleaned and diced
2 garlic cloves
1 small fresh chilli, finely chopped
8 tbsp olive oil
2 tbsp parsley, chopped
1 tbsp marjoram
4 slices of bread, drizzled in oil and toasted in griddle pan
Salt and pepper to taste
Heat a pan on med high and add 6 tbsp oil.
Add 1 clove of finely diced garlic and cook until just changing colour, then add the mushrooms and sautéfor a couple of minutes.
Add the parsley, marjoram and season.
Toast bread, when hot rub with clove of garlic, brush with remaining olive oil and top with mushrooms, serve immediately.
