Boiled orange cake


With Peter Gordon - From The Sugar Club cookbook - w heat and dairy free

 

Ingredients

3 large oranges

250g caster sugar

300g ground almonds

6 eggs

2 teaspoons baking powder

1 teaspoon ground cinnamon

½ teaspoon ground allspice

 

Method

Put oranges in a pot, cover with water and boil with a lid on for 20 minutes

Cut in half, leave to cool for 10 minutes, then put in food processor with the sugar and blitz to a paste

Add everything else and blitz together

Pour into a baking-paper lined spring-form cake tin and bake 170*C 40-50 minutes
