Beef Stroganoff

1 kg rump steak 

2x packs fresh or dried pasta 

1 tub sour cream 

1 pack mushrooms 

2 beef stock cubes (or make your own with the off cuts from your rump)

1 ½ cups water or stock (if making your own)

1 pinch nutmeg

1 pinch dry tarragon

¼ cup flour 

Pinch of sugar

Salt & pepper


1 clove garlic (optional)

Fresh chives or parsley (optional)


Cut rump into strips removing the fat, place salt n pepper in a bread bag with flour and shake till well covered, put tablespoon of oil in a hot pan, brown the meat and remove from the pan.

Peel and slice the mushrooms and garlic add to the pan and brown (you can add a knob of butter if you want) add the tarragon, nutmeg and rump to the mushrooms, pour in the stock or cubes dissolved in water and stir till it thickens remove from the heat and stir in the tub of sour cream and the pinch of sugar, stir in fresh herbs (optional). Taste to make sure it's yummy.

Boil a large pot of water add the fresh pasta and cook/stir for 5mins then strain.

Serve the beef on the pasta. (Or can serve on rice or with potatoes)
