Beef & Chilli Bean Soup

Shopping list -
Olive oil
2 red onions - finely chopped
4 clove garlic - finely chopped
2 tsp chilli flakes
2 sp ground cumin
2 1/2 Tbsp finely chopped fresh coriander + roots and stocks
2 tsp ground coriander
500g of beef mince
1 Tbsp tomato paste
4 large tomatoes roughly chopped
1 x 420g can red kidney beans - drained and rinsed
2 lt beef stock
Handful of freshly chopped coriander
1/2 cup sour cream + finely chopped spring onions

Heat oil in a large pan over medium heat.
Cook onions for several minutes until soft.
Add garlic, chilli flakes, cumin and fresh + ground coriander and cook a further minute.
Add mince and cook 4 to 5 minutes until well browned. Break up lumps as you go.
Add tomato paste, tomatoes, bean sand stock and bring to boil
Reduce heat; simmer 15 minutes until reduced slightly.
Stir in chopped coriander
Serve in bowls, topped with sour cream and chopped spring onions.
