Mixed Bean and Tomato Salad

This is my mother's recipe and an all-time favourite! It's a quick and easy meal served with warm crusty bread.

Beans are great for the brain - and the folate found in beans helps to keep your mind young. Researchers have discovered that people with the highest levels of B vitamins in their blood have better cognitive function and fewer brains lesions - a sure sign of aging.

Salad Ingredients:
1 medium can mixed beans drained and rinsed
1 medium can baked beans
1 cup thawed chopped French runner beans
1 cup celery finely sliced
1 red onion finely diced
2 gloves garlic finely diced
2 fresh large tomatoes finely chopped
1 green and red pepper chopped

Mix the ingredients together in a large bowl.

Dressing Ingredients:
1/4 cup raw sugar or less
1/4 cup spiced vinegar
1/4 cup olive oil
1 to 2 tsp grainy mustard
2 tbsp chopped fresh basil
2 tbsp chopped fresh parsley
And if you like it some freshly chopped mint
Little salt, and lots of freshly ground black pepper
1/2 tsp fennel or to taste- helps stop the wind

1/2 tsp celery seeds or to taste.

Pour dressing ingredients into a screw top jar and give it a good shake, before pouring over the beans.

Set aside for several hours before serving with fresh warmed crusty bread and a little cheese if desired.
