Astar's fish stew recipe - 29 September

1 cup long grain rice - cooked
Little olive oil
500g fresh fish - like cod
4 rashes of bacon - chopped
2 stalks of celery chopped including greens
1 green pepper - diced
1 large red onion - chopped
1 can Watties chopped herb flavoured tomatoes
2 cups fish stock
2 cups water
1 tbsp vinegar
1 tbsp balsamic vinegar
1/2 tsp each, ground cinnamon, cloves chilli
Salt and pepper to taste
In a big pot, fry off bacon and set aside.
Into the same pot fry off onion, celery, peppers.
Add tomatoes, fish stock, water, vinegars, spices etc.
Raise heat and bring to boil.
Add fish, reduce heat and simmer for around 8 minutes or until fish flakes easily.
Stir in bacon.
Into each serving dish, place some rice then top with soup.
Garnish, season and top with chopped parsley.
