Astar's Fish Pie

This is an all-time favourite meal at our place especially when I am busy outside and need to whip up a meal in moments when everyone is hungry. It's possibly the best easy fish pie in the WORLD. It's even more delicious with a fresh rocket salad and pan fried potatoes!

Makes enough for 6 and it's cheap!


210g tin salmon or use flavoured smoked fish
4 large eggs at room temp
125g butter softened and diced
1/2 cup self-raising flour
2 cups ordinary milk
1 red onion finely chopped
1/2 cup grated cheese
Couple Tbsp finely chopped fresh parsley and a little dill + grated zest of a lemon
Salt and pepper

Optional extra: A couple Tbsp grated parmesan cheese


1. Preset oven to 180c.

2. Put the eggs, butter and flour into a food processor and blend until smooth.

3. Combine the milk, fish, onions, cheese and herbs/lemon zest in a bowl, then add egg mixture.

4. Season well with salt and freshly ground black pepper.

5. Pour the mixture into a pie dish.

6. Drop grated parmesan on top of pie.

7. Bake for 50 minutes or until firm and nicely golden in colour.

8. Serve with a fresh rocket salad and pan fried potatoes.
