Chicken and Tomato Curry

One pot cooking

Serves: 4-6
Costs: $8 per serve

Ingredients
Olive oil
8 chicken drum sticks
1 red onion - cut into chunks
Couple cloves garlic -     diced
2 tsp freshly grated ginger
1 to 2 tbsp curry powder
500gm potatoes - skins on and cubed
1 granny smith apple - diced
1/2 cup water (approx)
1/2 tsp salt
Freshly ground black pepper
500g tomatoes - cut into chunks
250 gm long beans
1/2 to 1 cup natural unsweetened yoghurt
1 to 2 tbsp mango chutney
Freshly chopped coriander

Method

Heat oil in a large pan then brown on all sides - chicken - set aside.

Into same pan, fry off garlic, ginger and curry about 1 minute.

Add potatoes, apple and stir until well coated with spices.

 Return chicken to pan, pour over water and season and continue to simmer away for around 15 - 20 minutes.

Mix in beans, tomatoes and cover and simmer gently until beans are tender.

Mix in yoghurt and mango chutney .

Heat though, stirring continuously - don't let it boil once, add yoghurt.
